In a blender, combine the yoghurt, raw sugar, and a pinch or two of rock salt.
Blend the mixture until it becomes smooth and well combined.
Add the chilled water and the Gondhoraj lime zest to the blender.
Blend the mixture again until it becomes frothy and well incorporated.
Be cautious not to overblend the mixture.
Finally, add the Gondhoraj lime juice to the mixture and stir it in gently. Do not blend at this stage, as you want to maintain the frothy texture.
Pour the Gondhoraj Ghol into serving glasses.
Top each glass with a sprinkle of Gondhoraj lime zest.

You can also garnish each glass with a wedge or two of Gondhoraj lime. Serve chilled.
