When it comes to garlic, you either love it or hate it — there’s no in-between. Even so, these pearly white bulbs have been a part of culinary and medical traditions around the world, used to boost both heart health and flavour in a piquant dish. Now, their inky black versions are stepping up to steal the limelight. And for good reason.
Black garlic was first made in Korea inside a rice cooker, over a period of 60 days. While its true origins may be the stuff of urban legend, what stands is that black garlic is fresh garlic aged in a special 60°C environment, until it turns black and sticky like an Arabian date. In such a dank space, the enzymes present in garlic break down, ridding it of its sharp flavour and turning it almost sweet and earthy. The result? A handful of glossy black bulbs that some liken to the velvety taste of tamarind, the mellowness of balsamic vinegar or even the richness of caramel.
Enamoured by its umami essence, chefs at restaurants across the globe have been thinly slicing this superfood over salads, rubbing it into steaks or powdering it to use as the perfect seasoning for pretty much everything. Less pungent and more spreadable, black garlic can be perfectly smeared on toast or rubbed into meat and fish. Alternately, pair it with cheese and crackers or lay pan-fried slices atop your pasta for a delectable feast.

Hummus
Add a twist to regular hummus with a hit of black garlic. Blend cooked chickpeas with black garlic, tahini, lemon juice, olive oil and salt until it turns silky smooth. Serve with a generous drizzle of olive oil and a sprinkle of black garlic bits for a flavourful bite.
Herbed Yoghurt
To make this excellent party dip, all you need to do is mix plain yoghurt with minced black garlic, fresh chopped herbs like parsley or dill and some salt and pepper. Best served refrigerated, this black garlic-infused dip tastes great with crackers, vegetables and chips.
Bloody Mary
Put an enticing spin on the classic Bloody Mary with a bit of black garlic. Mix vodka, tomato juice and black garlic purée with a splash of hot sauce, Worcestershire sauce and a crack of pepper. Shake this well, pour over ice, garnish with a celery stick and sip away.
Sandwich Spread
Level up your snack game with a moreish sandwich spread. Easy to prepare ahead of time or in a hurry, this spread of black garlic mashed with mayonnaise, Dijon mustard, lime juice, salt and pepper, results in a creamy, umami sandwich spread we just can’t get enough of.
Garlic Butter
One of the best things to do with black garlic is to whip it into butter. Mix minced black garlic into softened butter along with chopped parsley or other herbs and salt. Once it’s well combined, shape it into a log or wrap and pop it in the fridge. Slice off portions as needed to deliciously flavour grilled meats, roasted veggies or warm bread.
